Here’s the thing about turkey burgers: They’re usually dry and rubbery. No more!! I experimented with tons of different additions — mayo, ketchup, egg, sour cream — before landing on this particular combo. The grated onion adds flavour and moisture without overwhelming the burger with ONION taste, and the dijon is surprisingly effective at making the burgers juicy and moist and delicious.
The three keys to Best Ever Turkey Burgers are:
Big flavours are critical.
Make the burgers really flat. Like really flat. Otherwise they get burnt before they are cooked through.
Use plain buns. I’m the first person to suggest whole wheat in other situations, but a grainy bun seems to overwhelm the experience, and not in a good way.

The Most Delicious Turkey Burgers Ever
½ cup panko
3 tablespoons Dijon
1 tablespoon Worcestershire sauce
¼ teaspoon salt
450 g ground turkey
Grate the onion using the large holes of a box grater into a large bowl. Add the panko, Dijon, Worcestershire and salt and stir well. Add the turkey and mix very well to combine.
Shape into 4 equal patties, making them very flat.
Preheat the barbecue to medium-high. Spray generously with canola oil. Add the burgers and cook 3 to 5 min per side or until cooked through and springy to the touch. Serve on buns with the usual condiments.
TIP: This is equally good with ground chicken. It's key to use very mild-tasting buns.
